COCONUT. PEANUT. CHOCOLATE.

A perfect trio inspired by flavours from the two raw sisters cookbook.

ingredients

BASE:

  • 1 cup oats

  • 1/2 cup puffed buckwheat (or puffed rice)

  • 1/2 cup dates

  • 2 tbsp coconut oil

  • 1 tbsp Peanut butter

  • 2 tbsp nut milk


FILLING:

  • 1 cup thread coconut

  • 1/2 cup peanuts

  • 1/4 cup maple syrup ( can substitute honey)

  • 3 tbsp peanut butter

  • 2 tbsp coconut oil

    TOP:

  • 100g dark chocolate

  • 1 tsp coconut oil

METHOD:

Start by soaking dates in boiling water for 5 - 10 minutes to soften.

In a blender or nutribullet blend oats and puffed buckwheat. Add to a separate bowl, then blend the dates into a paste.

Combine oat mixture, dates, coconut oil, peanut butter, and milk.

Press into a lined loaf tin or similar-sized dish then spread 2 tbsp of peanut butter on top of the base mixture.

Moving on to the filling; combine coconut, peanuts, maple syrup, coconut oil, and the remaining 1 tbsp of peanut butter in a bowl. Add this mixture evenly on top of the base. Set aside in the freezer for 10 minutes.

Using a double boiler or low microwave setting melt the chocolate and coconut oil.

Evenly pour chocolate over the slice, and leave in the freezer for around 20 - 30 minutes or until set.

Makes approximately 8 bars or 12 squares.
