Black bean brownie.

This is an OG recipe I’ve made for years and tweaked a bit each time I make them!
Don’t knock the black beans till you try it! These brownies as a great hack to get a source of protein and 1 of your 5+ a day! ( two if you count raspberries, and three if you count chocolate because that comes from a plant right??).
Ingredients
1 can of black beans ( rinsed)
¼ cup sweetener of choice ( I used rice malt syrup, but honey or maple syrup works fine)
100g dark chocolate
¼ cup coconut oil or butter
2 eggs
2 tbsp cocoa powder
2 tbsp wholemeal flour (oat flour or almond meal can be substituted)
1 tsp baking powder
Handful raspberries
Method
In a food processor, blend the rinsed and drained black beans until a paste-like consistency has formed.
Add in the 2 eggs one at a time. (If you have some small lumps don’t worry, these will blend out later).
Over a low heat melt coconut oil/ butter, sweetener, and 80g of the dark chocolate until smooth.
Slowly combine the chocolate mixture with the black beans.
Add cocoa powder, flour, and baking powder and give a final mix.
In a lined baking tray, approx 15cm - 20cm, add the mixture and spread evenly.
Top with remaining chocolate ( roughly chopped) and raspberries.
TIP: If raspberries aren’t your thing a swirl of peanut butter can be substituted on top instead.
Bake at 160 degrees for 20 minutes or until the knife comes out clean.
