pulled pork + pineapple tacos

Recipe:

Makes 10-12 tacos

Prep time = 7 hours

Assemble time = 10 mins

PORK:

  • Boneless pork roast (1.5kg)

  • 1/2 onion diced ( brown or red)

  • 2 tbsp tomato paste

  • 1 tbsp garlic

  • 1/4 tsp cumin

  • 1/4 tsp mixed herbs

  • 2 tbsp honey or pure maple syrup

  • 1/4 cup Pineapple juice

  • 3 tbsp Apple cider vinegar

  • 1/4 cup water

  • salt + pepper

TACOS:

  • 10-12 small tortillas

  • Finely cut red cabbage

  • Spinach

  • Red onion - finely diced

  • Tomato -finely diced

  • Pineapple

  • Aioli

  • lemon/ lime (optional)

Don’t overlook the 7 hour prep time for these delish tacos! The pork can literally cook while you are out and about all day and then you just need to assemble them.

METHOD:

Dice the pork roast into smaller chunks ( this will help with cooking), then add to a slow cooker with the onion, garlic, tomato paste, seasoning, honey/maple, juice, and water. Set on low and leave for at least 6.5 to 8 hours.

Spoon out the pork pieces into a bowl, shred with 2 forks, and leave aside.

Finely dice all taco salad ingredients and leave them aside until it’s time to assemble.

In a hot pan lightly brown the pineapple pieces. This will bring out the flavours and adds caramelisation.

Heat the soft tortillas either in a hot pan or microwave.

Then simply assemble and serve. These are perfect for flat dinners or when having friends over.
