APPLE & WALNUT SCROLLS.

Makes 6 large scrolls

Everything in moderation right?…

These Apple and walnut scrolls are fluffy, nutty, and sweet. The perfect dessert or weekend recipe to share with friends ( or not… I’m not judging).

Ingredients:

Dough

  • 2 cups all-purpose flour*

  • 3 tsp baking powder

  • 100g butter

  • 1 cup milk

Filling

  • 120g butter

  • 1 tbsp honey

  • 1/4 cup brown sugar

  • 2 tbsp cinnamon

  • 1 large/ 2 small apples - diced

  • 1/2 cup chopped walnuts

Icing

  • 2 tbsp cream cheese

  • 1/4 tsp vanilla paste/ extract

  • 1/2 cup icing sugar

  • boiling water to desired consistency

*can sub out the baking powder and all-purpose flour for 2 cups of self-raising.

 

METHOD:

Sift flour and baking powder together in a large bowl.

Dice the butter into small cubes and use fingers to combine all the butter and flour together, add milk and combine with a wooden spoon.

On a floured surface dump the dough out and lightly kneed until smooth, 2-4 mins should do.

Using a rolling pin ( or anything that does the job) roll out the dough into a square shape around 1/2 cm thick.

In a bowl soften the butter for the filling, then add honey, brown sugar, cinnamon and combine.

Spread evenly onto the dough. Finally, dice the apple into small cubes along with roughly chopped walnuts. Sprinkle onto the dough as evenly as possible.

Time to roll.

Cut the dough into 6 strips and roll to create the scrolls.

Place into a lined overproof dish about 1cm apart so the rolls keep quite tight when cooking.

Fan bake at 185 degrees for 22-25 minutes.

For the icing microwave the cream cheese for 20 secs to soften, then add vanilla, icing sugar, and boiling water until a pourable consistency is achieved. Drizzle over scrolls and enjoy xx
