Apricot Dark Chocolate protein balls.

INGREDIENTS:

  • ¼ cup almonds

  • ¼ cup sesame seeds

  • 1 cup oats

  • 1tbsp chia seeds

  • ½ cup desiccated/ thread coconut

  • 1 scoop vanilla protein

  • ½ cup dates

  • ½ cup apricots

  • 1 heaped tbsp peanut butter

  • 2 tbsp milk ( if needed)

  • 60g dark chocolate

  • 1 tsp coconut oil

METHOD.

Soak the apricots and dates in boiling water for 5-10 minutes to soften. Then drain water and blend in a Nutri-bullet or high-powered blender until it forms a paste, add peanut butter to this mixture and leave aside. 

Then add all dry ingredients to a blender and blend until fine. Add both the dry mixture and the date mixture together until an even and slightly sticky consistency forms, if too dry add 1-2 tbsp of milk.

Roll mixture into balls, my mixture made about 10 decent sized balls

Set aside in the fridge to cool, while chilling melt the chocolate and coconut oil, either over a double boiler or in the microwave.

Using a spoon or fork roll each ball in the chocolate until completely covered.

Set on a plate or board with baking paper and pop back into the fridge until the chocolate sets. 

Enjoy! - these keep for 5 days in the fridge.
