Banana choc chip muffins.

Makes 10 muffins

Time - 30 mins (12 - 15 minute cook time)

Fluffy chocolatey muffins. With 1/4 the amount of sugar. Win, win.

INGREDIENTS:

  • 85g Butter

  • 1/4 cup sugar

  • 1 egg

  • 2-3 bananas

  • 1 tbsp vanilla essence

  • 1 tsp cinnamon

  • 1 1/4 cup self-raising flour

  • 1 scoop vanilla protein powder

  • 3 tbsp milk

  • 1/2 tsp baking soda

  • 1/2 cup chocolate chips

METHOD.

 

Preheat oven to 180 degrees and line or grease a muffin tray.

Soften butter and add to bowl with sugar and vanilla, whisk until well combined. Add the egg and whisk again.

Sift flour, protein powder, and cinnamon into the wet ingredients and combine.

Heat milk until warm and add baking soda to it. Mix around ( should start to slightly foam or increase size).

Add to the mixture along with chocolate chips.

Once everything is combined ( but not overmixed), spoon the mixture evenly into a muffin tray. Makes approx 10 muffins.

Bake for 12-15 minutes or until a knife comes out clean.
