Hummingbird pancakes

Level up the 2 ingredient ‘banana and egg’ pancakes.
Hummingbird mixes flavours of banana, pineapple, and coconut, Delish!

How to:

Ingredients

Makes 2-3 pancakes. Double the mixture per person.

  • 1 egg

  • 1 small banana

  • 1/4 cup flour ( oat flour or GF alternative)

  • 1/4 tsp baking powder

  • 2tbsp desiccated coconut

  • 1/4 cup crushed pineapple

  • Toppings: I added crushed pineapple, blueberries, yogurt, and maple syrup. But nything will do

Method:

Mash the banana in a bowl* and then mix in the egg.
Add the flour, baking powder, coconut, and pineapple to the bowl and stir until combined.

Heat up a pan, add a small amount of butter and cook until golden on each side.
Plate up and add toppings.

Enjoy!

*tip: mixing it directly in the bowl will keep the mixture thick (small lumps are fine). Blending the mixture makes it really runny and harder to cook.
